Kath’s Family’s Weekly Dinner Staple

How do busy moms keep themselves and their families eating healthy?  Bowls are a must try favorite around Kath’s house.

Starting with a weekly preparation hour is key. Try prepping with music and wine to enjoy the process 🙂

1.  Chop, spiralize or slice raw veggies and put into separate containers. Here are some of Kath’s families faves – sliced or grated carrots, sliced celery, raw beets (grated or spiralized), chopped broccoli or cauliflower, bean sprouts, chopped bok choy, mushrooms, kale, spinach, endamame, green onions, spiralized zucchini, and sliced peppers

Keep them separate so everyone can customize their bowl to their taste.

2. Cook a triple batch of grains – Brown rice, quinoa, wild rice whatever you have in the pantry and enjoy

3. Protein – anything goes – tofu, chicken, beef or bison, fish.  Let’s face it – it’s usually the left over protein from a big Sunday dinner. If not, cook a few chicken breasts or grill some steak while chopping.

NOW FOR THE (not so secret but so awesome) SECRET INGREDIENT – Glory Bowl Dressing from Whitewater Cooks (Shelley Adams)

This may be THE best dressing ever.  This also may be the best cookbook ever – all Canadian from the Whitewater Winter Resort in Nelson, BC.

Glory Bowl Dressing

1/2 Cup nutritional yeast flakes (available at Sobey’s or Vita Health)

1/3 Cup water

1/2 Cup Tamari or Soy Sauce

1/3 Cup Apple Cider Vinegar

2 cloves garlic, crushed

2 Tsbp Tahini Paste (in peanut butter section)

Blend the above in a Vitamix or blender

Slowly add 1 1/2 Cups vegetable oil or avocado oil in steady stream to blender

The dressing keeps for about a week in fridge but bring to room temperature an hour before serving.

Now that the prepping is done whenever you’re ready to eat set out veggies, rice, and protein buffet style and get creative making your bowl.  Be sure you top it off with the dressing. Make a bowl for lunch the next day too at the same time.  The grain and protein can be eaten cold or warm.

One last tip is if your veggies are going on a few days in the fridge and starting to look less appealing, make a quick broth and throw in a pot with vermicelli noodles and frozen min-wontons (Costco:)) to make a great Vietnamese hot pot soup dinner.

When you get to Friday night dinner – go out or order pizza!!!!!
