Sharon’s Favorite Fall Vegan Salad You Must Try!


Spiralized Cucumber Quinoa Salad

2 large cucumbers spiralized (Let sit in strainer with paper towel to drain liquid)
1 chopped mango
2 large handfuls of assorted seeds (pumpkin, sunflower and sesame)
2 large handfuls of dried cranberries
1 cup cooked quinoa
1T fresh chopped ginger
1 handful of fresh chopped basil
2T olive oil
1T balsamic glaxze
salt and pepper

Mix all together and serve immediately
